Chicken and Dumplins

A morning clipper with lots of wind, snow blowing and white outs and then a beautiful sunny afternoon and evening.  Made for some great pictures and an appetite for some comfort food.  I was fortunate enough to have most of the ingredients for Chicken and Dumplins.  I used a recipe Pioneer Woman but left out a few ingredients.

INGREDIENTS
Olive oil
1/4 cup flour
5-6 Chicken thighs OR 1 whole fryer cut-up
1/2 onion, diced
2 celery stalks, diced
2-3 carrots, diced
1/2 tsp. thyme
1/4 tsp. turmeric
6 cups chicken broth
1/4 cup red wine vinegar
2 cups Bisquick
2/3 cup milk

Salt and pepper chicken

Dredge in flour, shake off excess

In two batches, brown the chicken on both sides.  Set aside.

In the same pot, add the diced vegetables.

Cook until translucent

Add the thyme and turmeric and stir

Add the broth and stir

Cover and simmer for 20-30 minutes

Remove chicken from pot.  Remove from the bone and then with two forks, shred the chicken.

Return chicken to pot, bring to a boil

 In a medium bowl, combine the Bisquick and the milk until it forms into a ball

Scoop dough with a teaspoon and drop in boiling broth.  Repeat until all the dough is used up

Cook uncovered for 10 minutes.  Then cover the pot for 10 more minutes.

Serve in a bowl and enjoy




We had an additional 5" of snow from today's clipper.  It was very, very windy, the snow was blowing causing white outs but as soon as it passed this is what we saw (pictures above).  Beautiful and picturesque!

I love the snow, I love snow sceneries.  What I don't love is blizzard like conditions.  Northern Michigan had blizzard like conditions this morning and I'm sure glad I wasn't up there.  I love when the snow falls gently, I call it "Christmas Snow".

What a better way to spend a cold, chilly day than with some delicious comfort food, Chicken and Dumplings, a guilty pleasure.

Ina Garten's Outrageous Brownies

Nothing says love more than brownies made from scratch.  Not a box, not store bought but from scratch!  These brownies are SOOOOO amazing, you will never want any other kind, ever!

They literally melt in your mouth.  Probably because of the ton of butter it has BUT before you turn away, it makes a WHOLE 12x18 cookie sheet!

Plenty for a classroom party, coworkers, women's group and of course, your loved ones.

I plan to send some to my kids and grandkids.  I wrapped them up in these adorable brown tulip baking cups.
