Orzo Salad
1 lb. box Orzo pasta, cooked according package directions. Cool under cold running water and set aside.
1 pint grape tomatoes, sliced in half lengthwise
1 tbsp. fresh basil, diced
1 small can sliced black olives, drained
1/2 green pepper, diced
1/4 olive oil
Juice from one large lemon
Salt & Pepper to taste
In a large serving bowl, combine the grape tomatoes, fresh basil, black olives, and green pepper. In a small mixing bowl, combine the olive oil, fresh lemon juice salt and pepper. Add orzo pasta to vegetables then add the lemon juice mixture and combine gently. Add more salt and pepper if needed.
I knew the minute I watched Giada DeLaurentis cook an Orzo Salad a couple of days ago, I just had to do the same. Hubby and I went grocery shopping today and I picked up all the ingredients for the Orzo Salad. I didn't write down a shopping list so I had to remember what Giada put in her salad. I know I definitely wanted the lemon and definitely did not want the Feta cheese because I don't like it (but you're more than welcome to add it yourself!).
I served it with some roasted chicken. It was such a hit with my hubby, nephew, sister and her hubby that it is all gone and I am very sad :( No leftovers. Oh well. I'll just make some more!!
